Ryan and Valerie Van Beek have the distinction of having my very first wedding cake!
Their cake was a 2 layer 6" round on top with a single layer 10" round on the bottom. 2" Roman pillars separate the cakes, with another set of 2" Roman pillars elevating the display so flowers could be added around the base. Fall flowers were used, which matched the bouquets, as well as the yellow ribbon trimming the base of each tier. Buttercream frosting in a Cornelli lace pattern adorns the sides. Valerie's Willow Tree top was an excellent choice, adding some height to make the cake appear very tall and grand.
These are displays from 2007 Bridal Fairs. Red is a very popular color right now, and traditional round cakes look very elegant.

Double layer 6" and 10" rounds are tiered for a winter themed wedding. Snowflakes were piped around the sides and edible glitter is sprinkled on the surfaces for a frosty appearance. The toppers are custom made using miniature snowflake ornaments, craft wire, and bridal satin. Fake snow and ice are sprinkled on the white and silver tablecloth to finish the look. Sheet cakes can be made to match with a scattered snowflake pattern and lots of edible glitter.
A photograph was used to copy the features for this replica of a wedding cake for a 20th anniversary. The cakes are all single layer. Centers are 6", 10", and 12". Side cakes are both 10". Tiers are separated by 2" Roman pillars, and sides are joined using filigree stairways.
Another new trend in weddings is to have a cupcake by each guest's plate or a "cupcake buffet" rather than a large wedding cake. This eliminates the need for cake cutters as well as confusing cutting diagrams often necessary for the more traditional round wedding cakes. These cupcakes and minis are piped to look like roses and make a beautiful centerpiece as well as dessert.
This wedding cake is a cluster of individual cakes arranged on beautiful acrylic stands, available for rent. 2 12" chocolate cakes with chocolate frosting at the base, 2 10" cakes, and single layer 8" and 6" cakes complete the display. The bride provided the table decorations. A simple cornelli lace pattern on the sides of each cake and tops dusted with edible glitter ties them all together simply without taking away from the beautiful floral arrangements. A 2 layer 7" cake was decorated with the same cornelli lace placed among ruffles and scallops in the brides colors. This cake was placed atop a matching clear stand on the head table to serve as the centerpiece as well as dessert for the wedding party.
This wedding cake is 6, 8, 10, and 12" tiers covered in smooth fondant with a wide black ribbon trimming the base of each. Garden flowers add just a touch of accent to this simple, elegant display.
My booth at the Sioux County Youth Fair 2007 had 3 displays. I was able to feature some of my new cake stands available for rent as well as the water and punch fountains.
This display is 6", 9", and 12" cakes set in 3 separate tiers on a chrome stand. The buttercream icing is very smooth with a burgundy ribbon around each base. A bead border outlines the top edge of the ribbon as well as the bottom and top edges of the cakes. The florist put together special cake toppers in the bride's roses, hydrangeas, and berries.
Cupcakes decorated to look like giant roses were placed on cake stands in the center of each guest table, serving a dual purpose as dessert and centerpiece. The couple also had a traditional stacked cake to serve the head table as well as for their pictures.
This wedding cake combines tiered and stacked layers to create a very formal looking cake. The wire candlelight stand and insert add a bit of elegance. A tiny scrollwork pattern is piped over the sides with a fine bead border to finish. Photo was taken before candles and flowers were added by the florist.
This cutie has stacked 6", 8", and 10" 2 layer round cakes. The lavendar heart scrollwork matches the bridesmaids gowns and a very tiny white bead border trims the bottom edge of each tier. Silk rose petals are sprinkled over the cake and table, and the topper completes the fun look.
This was an exact replica of a wedding cake for a 50th anniversary. The tiers are 14", 10", and 6" squares. This look (squares stacked directly on top of each other) happens to be very popular right now, as does putting some color into the decorations.
Dirt and worms cupcakes was the request for a fall wedding. The bride's decorations were rust and chocolate brown. The cupcakes looked very bright and festive on the guest tables.
6", 8", 10", and 12" square cakes iced in very smooth buttercream make up this cake. The bottom of each tier is wrapped with ribbon which matches the bridesmaids dresses. Tiers are slightly offset for a unique look. Orchids and bear grass adorn each tier and a vase of orchids and lilies in the back finishes the display.
These 6", 9", and 12" tiers are set on the candlelight stand. The mocha color comes from matching a paint sample. Embroidery designs are taken from a cake on the Martha Stewart website. Sheet cakes make up the additional servings needed, and orchids and evergreen add an elegant touch to this Christmas wedding.
These four are displays from the 2008 Bridal Fair. A variety of design elements are popular right now, the biggest being the use of color in the cake, whether in the icing, or ribbons and flowers that stand out. Vintage square cakes are also making a comeback, as well as a simpler look as opposed to big overpowering displays.
This stacked cake has a very smooth buttercream layer with a simple strand of pearl border at the base of each tier. The bride and groom's names adorn the second tier with intertwining hearts to match their cake topper. The cake rests on the silver stand, available for rent.
The tradition of a groom's cake is not widely practiced in this area, but this bride wanted to surprise her groom with a cake representing his favorite Nascar driver. Groom's cakes are available in a variety of shapes and sizes that will reflect his interests and personality.
This wedding reception had a western theme in chocolates and ivories. The cake's scroll design was elegant enough for a wedding, but casual enough for the theme. Colors were matched to the wedding invitiation and the ribbon used at the base of each cake. Miniature roses and greenery were kept simple and the Willow Tree added the perfect amount of height to compliment the width of the display stand. Sheet cakes carried out the colors, some in ivory with chocolate accents, some in chocolate with ivory accents.
A sheer band of pastel color finishes off each of these 6", 9", and 12" tiers. A tiny dot pattern covers top and bottom tiers, with a scripted monogram on the center one. A dainty topper and rose petals give the whole display a simple elegance.
This was a fun cake that told everyone what the bride and groom's favorite sports are--tennis and cycling. Their initials (bride and groom are both AJL) are in script lettering on top of the cake. Bright pink ribbon wraps the cakes and silver cake board, which looks very elegant on top of a round mirror. Pink rosebuds top each piece of the matching sheet cake.
12", 10", 8", and 6" squares form an offset spiral for this cake. Each cake is iced smooth in white buttercream. Base of each tier is wrapped first with a wide chocolate ribbon, then finished with teal rope. Orange and fuschia roses heavily adorn the top with matching accents at each tier's corners.
These 6", 10", and 14" squares are set diagonal to one another. Each tier has it's own design (Swiss dots, Cornelli lace, and tuxedo stripes) and each of the sheet cakes has a top design to match the tiers. Black satin ribbon wraps the base of each. The cake is elevated on a cake stand covered with matching black satin. Classic red roses finish this elegant display.
These round tiers are 6", 8", and 10". Each tier carries its own design (Swiss dots, scrolls, and quilt blocks) in white buttercream with pink accents. A double strand of ribbons in green and pink wraps the base of each. The display sets atop a silver cake stand which is available to rent.
Below is a stacked cake made up of 6, 8, 10, and 12" tiers. The base of each is wrapped with 2" wide ribbon with a dot pattern alternating between the ribbon and cake. A pearl border finishes the edges.
This is a miniature scale of two bride's cakes for a combined bridal shower. 6, 7, 8, and 9" single layer round cakes were used to serve about 60 people.
These 6, 8, 10, and 12" round cakes are arranged on clear acrylic stands. One of the Willow Tree figures rests on an additional stand to match. Cakes have an all over scroll or Swiss dot pattern alternating the layers. A floral bouquet finishes each one. Sheet cakes have an all over scroll design to match.

This cake was made for a 3rd grade Career Day project. A plainly iced stacked cake was brought into the classroom and the designs for each tier were chosen by the students. We discussed how important it is to pay attention in school and counted off 8 high school classes that help me in my work today--especially art, science and math! Thanks to Mrs. Boer's 3rd grade class at OCCS for a fun afternoon!

This bridal shower cake consists of 3" tall tiers, rather than 4" double layers. Red roses and black ribbon pick up the bride's colors.
These displays were at the 2009 Bridal Fairs. Brown is still a popular color, and greens and teals are starting to show up in many of the color schemes. Scroll or swirl patterns are very popular this year, as are multi-patterned cakes with each tier showing an independent design. Another trend for this year is to put cupcakes on the guest tables as a centerpiece, saving both time and money.

These tiers are smooth buttercream with the focus being on the flowers and arrangement. Fountain water is dyed blue to match the ribbon on the stairs.
This two tiered display has a different pattern on each tier and is set on a square metal stand, available for rent. Lime and black ribbons around the base of each tier and a Willow Tree figurine make the finishing touches.

Cupcakes are a popular-and easy-way to serve your guests. This display has a cake for the couple to cut and take pictures with, but also has a no fuss way for the guests to serve themselves. No messy cake cutting, and no extra expense in cake plates.

This bridal shower cake has a quilt design on the sides and pearl borders. The clear pillars, rather than white, give a look of the top cake almost floating in air.
3 stacked squares make up this bridal display. A double ribbon around the base of each tier adds a dramatic look. Real roses and lilies accent each tier with a traditional bride and groom at top.
This cake was made using a magazine page as model. A technique called tip embroidery is used to pipe the flowers on the cake so they have the appearance of lace appliques.
This was a very special cake as it belongs to my sister-in-law Stacy and her new husband Jason. The center tier is tip embroidered with daisies to match her flowers. Top and bottom tiers are covered in Cornelli lace, a frosting pattern made to resemble lace. Cupcakes were used as table centerpieces.

An elegant scrollwork design is piped in brown to match the ribbon wrapped at the base of each tier. The cake is ivory to match the bride's dress. Twigs and berries decorate this dessert table, leaving the design of this cake to be the centerpiece.
This cupcake display is set up on a variety of glass stands with the display as the centerpiece. Sugar cookies are monogrammed and set at each place setting for guests to take home with them.
